Those ingredients look pretty typical of most deli meats - most are loaded with preservatives and that's what all the "sodium" ingredients are. Personally, I do fine with deli meats. Someone else may not, but I eat it almost every day. Dextrose, if I'm not mistaken, is safe. I can't remember if it's a sugar or a starch, but I'm pretty sure Syl ok'd it in one of her posts so I'm inclined to accept that it's okay.
I'm not familiar with Spectrum mayonaise, let me look for your post and I'll get back to you...
