I can't help you with the enzyme thing, but I just have a few thoughts on what you are eating.
You need to give the diet time. You said that it doesn't seem to help when you cut all the bad stuff out, well how long have you tried? There are people on the board who have taken months to become stable. The diet doesn't work overnight – you have to ignore all those testimonials that pop up on the homepage of this site with people saying that the diet changed their lives within a matter of days, or even weeks. Those people are the exception, not the rule.
And hot dogs and sausages are not all safe. Most of them are very high in fat. I buy the Schneiders reduced-fat hotdogs, they only contain 0.3 grams of fat each, so they are virtually fat free. I seem to tolerate them quite well!
