Heather addresses this somewhere on the website (I'll find the link and come back and edit my post). Okay here is the link: Won't all these high-carb foods make me fat?

I used to do a low-carb diet - I did it for exactly one year from Aug. '03 to Aug. '04. I read the Atkins Diet book cover to cover, and I know all about the "white bread turning to sugar and being stored as fat" idea. I don't know how accurate it is, but it doesn't matter for us on this diet because we are eating low-fat. High-carb won't make you gain weight as long as you are eating low-fat.

When I was doing Atkins, I lost 14 lbs (went from 152 lbs to 138 lbs). When I stopped, I gained most of it back (I went back up to about 148-149 or so). Since I've been doing Heather's diet, I've lost all of it again - I now weigh 137.5 lbs, and I'm eating white bread every single day, plus rice, pasta, potatoes, and all those "forbidden" white foods that are "supposed" to be stored as fat. But because I'm eating low-fat it doesn't matter!
