What's the difference between IBS and hardcore food intolerance?

Hi there.
If we can control our IBS by avoiding the foods that upset it, then what makes us so different from others who are intolerant to coffee etc...?

Is it that our symptoms are more severe or that our tummies are also susceptible to being sensitive to other stimuli like nervousness etc making us cramp? Because I sometimes get that when I am excited and happy to be going out but I think "Oh no what if I get a bad pain and need a loo quickly?" and sure enough, I almost always start to feel that in my bowels.
