Ehm, I don't really remember how much fat I was adding. I don't think it was more then 1/2 cup which is not that much considering it's for the entire loaf. But I actually think it was less then that. I didn't worry about the fat content since all the other ingredients in my sandwiches were low in fat.
I didn't try any of the other premixed products but I did mix my own flours to bake breads. I used garfava (combination of garbanzo and fava bean flours), white and brown rice, tapioca starch, potato starch flour, and sorghum flour. I also tried soy flour but I couldn't stand the taste of it. The breads came out pretty good tasting. I didn't really try to make any sweets since I have always preffered store bought candy (hard candy, chocolate, etc.) anyways. But I wasn't eating much sweets back then in general (I think that's also why I felt so much better).
