Re: What to eat when you don't want to fix a meal?       12/11/07 10:08 AM Edit Reply Quote MelanieR Reged: 02/15/07 Posts: 306 Loc: Florida I don't know if this is what you are looking for but when I just don't feel like cooking I make chicken and rice. It takes about 15 minutes or so. -1 lb of boneless skinless chicken breast- cut into bite sized peices -rice-a-roni type rice chicken flavor (if I remember correctly rice-a-roni has milk in it. My store brand does not so I get that.) -frozen veggie of your choice- we like mixed. Have also used just corn and peas. 1) Spray a skillet with cooking spray 2) Trim fat from chicken and cut into bite sized peices. 3) Cook chicken in skillet untill almost done. 4) While chicken is cooking start rice. 5) Cook veggies by directions on package. (I never measure how much. Maybe a 1/2 cup.) 6) At around 5 minutes left on cooking time to rice add chicken. Recover and cook. 7) Drain veggies 8) Add veggies and mix.
