Mexican rice is typically made the way some Caribbean latinos make their rice (the way I used to--I'm Dominican). It's "stir-fried" in oil first until the grains get somewhat chalky, and then the seasonings are added, then the water. It's good as hell but I'm guessing it's the first step that's getting ya. Some of us add a slab of bacon or a hamhock just to add more flavoring to the rice and you know what they say about the other white meat for IBSers--stay away from it!
