The starch from corn is used to make corn syrup which is 100% glucose. A number of steps involving the use of enzymes converts the glucose to fructose for use in the preparation of HFCS. Corn itself contains a very small amount of free fructose and glucose ( about 0.5 gr / 100 gr of each). On the other hand corn is very high in IF
