Some fat is needed in the diet to make the digestive system work. The idea is to have only 30% or less fat of the calories in your stomach at one time. It is also wise then to eat fats that are healthier. So salmon has a higher fat percentage per calories but when added to a meal with low fat sides the percentage works out and it is good for the body too! Each person has to figure out how much fat they can tolerate at a time.
Cheese is binding true (as DH is lamenting today) but it is not the way to stop D. Grease causes D but is not the way to stop C. This is because of the spasms that occur after a trigger food. If someone with C can poop because of coffee their system becomes dependent on it to go and then will stop working on its own. Cheese can also still cause D for those with D because it is fatty. But if it did make them more bound it would not be in a healthy way and would lead to further D down the line. Trust me I am an A and used to go back and forth every few days and the reaction to one would cause the other. Hope this makes sense.
