Chicken, turkey, and fish are fine. Stick with white meat. As for shellfish, it seems to vary from person to person. I can eat shrimp until I look like one but crab gives me all sorts of troubles. I know that others, though, can eat crab w/o problems.
Cheese: The bottom line here is that you will never find a cheese substitute that looks, smells, or tastes like dairy cheese. However, there are some subs that are very tasty. Veggie slices are okay (the pepper jack is good). Soy-Sation is my favorite. Tastes good, melts well, and is available in shreds and blocks. I sure do miss dairy cheese but it isn't worth the pain and discomfort.
Have you tried hypno? Acacia fiber?
If you haven't already, you may want to try the Break the Cycle diet for a couple days and then start adding foods back in.
