My default gotta-use-stuff-up is almost always a stirfry. I don't know what other vegetables you have other than the peppers - I wouldn't use spinach in a stirfry - but I just saute the stuff up, throw it over rice, and add some soy sauce, if I don't feel like digging up an actual recipe.

If you don't have any other veggies, I would cook the pepper till soft, add the spinach and cook till wilted, and then use that mixture as filling for an egg-white omelette or quiche. Leftovers make for tasty breakfast food and can be eaten for a couple days.
