I'm not a vegan, but a local vegan place here in Chicago ( Veggie Bite) got the idea in my head of trying seitan. It's just wheat protein, so it might not give you the troubles that soy and other beans do. And it tastes so good....

Other (more beany) ideas: lentils seem to be a little easier to digest for me than other legumes. Hummus, because it is ground up, is also a very safe choice. And, if you can handle a bit of fat, nut butters are delicious and full of protein.
