I would choose either the cajun chicken or the vegetable chili.
If you get the cajun chicken, definitely get the rice instead of the chips. which would be too high in fat. And don't forget to get the dressing on the side for the salad, and to eat it last (and maybe not too much of it).
with the vegetable chili, just make sure that they are not going to put a cheese topping on it. You can probably ask them to leave it off if they are.
The enchiladas might be an okay option if you can get them to leave the neese sauce off entirely. Just make sure to ask whether or not there is any dairy inside the enchilada itself.
Also, if they serve bread with the meal, have a slice before eating anything else.
Remember to relax and enjoy the meal. I always try to approach restaurant meals with the thought that I will make the best choices I can, and then focus on enjoying myself. Because if the food is going to cause problems, I might as well at least enjoy eating it - otherwise I've only made myself miserable twice. Have a fun lunch!
