The other book is called Breaking the Vicious Cycle by Elaine Gottschal. It outlines the "specific carbohydrate diet". It recommendeds eliminating all grains and all sources of sucrose. The diet is mainly animal products and the baked goods are made with almond flour.
As for the negative celiac panels, he did the tests because of a return of symptoms after being symptom-free for about 4-5 years. He said that the antibody tests are never show zero antibodies in celiac patients unless the patient nevers eat out, never eats food cooked by others, never allows wheaten foods to come into the house. He also ran the genetic test, but the results aren't back yet.
