I am really, really sorry you and your roommates are having problems. IBS is a long, personal struggle to find out what works and doesn't work to help decrease your problem. Also, IBS cannnot be cured, and many other problems mimic IBS.
Please note that Heather encourages everyone to avoid trigger foods. For example, you may want to buy some vegan, low fat grahmn crackers. However, she points out that somethings, such as the aforementioned butter grahmn cracker, can be consumed in small amounts on a full tummy. For example, she says that she consistently eats CHOCOLATE at the end of a meal, because her stomach is full and it passes through easily. I have found this to be true in my own case as well... but no two tummies are alike.
Therefore, I feel that Heather doesn't contradict herself, but instead encourages you to:
1. be aware of what triggers you. If 1/6 of an egg yolk in a grahmn cracker doesn't bother you -- cool. If it doesn-- avoid it.
2. Test, Test, Test -- slowly incorporate foods into your diet to pin point triggers.
3. Don't give up good food entirely, and don't be afraid of food. You need to figure out what you can handle and what you can't. It's your body... get to know it, and decide what you put into it.
