Can someone clarify...spacing betweeen eating a trigger food and a flare up

It seems that we all have varying degrees as to what will send us straight to the bathroom (IBS-D) but I have read several posts where some people think something they've eaten a few days ago could have triggered an attack. Can it really be that long ago? I've been trying to slowly add a few more things to my diet since I've been doing pretty well with the Acacia and eliminating trigger foods, but since the time span is unclear, I'm not always sure about what might have triggered a flareup. Actually, thanks goodness they are not full-blown flare ups but I've just been uneasy a few times and not sure how far back to look at what I've eaten. Does anyone know the physiological answer to this? thanks
