I think gelatin is one of those things that you won't know till you try it. I don't recall ever seeing anything that said it was unsafe, and I've always been able to eat it just fine. Do stay away from the sugar-free ones; artificial sweeteners are definitely not safe for IBS.

Marshmallows should be fine as well - fat free, no dairy, no HFCS in any brand I've ever seen. There's recipes in the Index, like the rice krispy treats, that use them.

As for the flour, it's all personal preference. Bleached is just processed one step further, and I prefer unbleached for that reason, but it won't make a difference IBS-wise.
