i agree with the rice milk and cheese comment as well as almond milk and cheese, actually i now just omit all cheese, even fake in general, i just don't miss it anymore.
On the subject of bread, i eat very little grain based carbs and do well now that i am stable, millet is a good easy whole grain, as is amaranth, quinoa seems to give me issues even though it is listed as soluble. Buckwheat is good too.
generally i do cereal in the morning and have a pita with luch as a sandwich and once a week i have pasta, other than that its all veggies, fruits, nuts, some tofu, beans and fish, the only veggies i stay away from are lettuces, spinach is fine for me though. Good luck.
