If you're doing fine at 2 teaspoons of Acacia per day, definitely stay there. Heather says repeatedly that you don't have to take the maximum. If you do want to try taking more, I'd say to drop back to your 2 teaspoons a day dose for a few days, until your tummy calms down, then try increasing by just 1/4 teaspoon a day. Hold there for at least 3 days and see how you feel.

As for the Chinese noodles, they could be a problem. Wheat flour is fine, but whole wheat flour is IF. If the noodles were totally whole wheat flour and you didn't have any other soluble fiber with them, that could have done it. Also, Chinese noodles can be quite oily and, if you were really unlucky, you might have found some that have MSG in them. I do eat lo mein from time to time, but only where I know there's no MSG and the noodles are not whole wheat, and I always start off with a bowl of plain, white rice.
