My cousin purposely mispronounces it & calls it "spanking-your-pita", a little risque, but funny! And the owner of the local Middle-Eastern restaurant knows him for that reason! He calls my cousin "Mr Spanking-your-pita"! I hope to have time to try what Gaiassong suggested w/the tofu this w/end. I haven't had spanikopita in almost a year so I'm excited about it!
