eating safe foods and still having problems - need some support!

I started Heather's diet eating only the safest foods for a few days and then began adding in only a couple new items for the past two days...boneless chicken breast and a few steamed veggies. Also made the cinnamon zucchini bread. Yesterday was my daughter's first birthday and I didn't eat any of the yummy foods we had here....burgers, pie, etc. Got up today feeling good...things were quite normal and then I got hit with awful diarrhea this evening. I'm feeling discouraged because I'm avoiding so many foods in an effort to stabilize my stomach and to identify trigger foods. Here are my questions: does anyone else find themselves doing fine for several days only to be hit with an attack that seems to come out of the blue - this happened to me last weekend too. And should I return to the few really safe foods or just proceed on as I'm going? I'm also taking Citrucel each day. I'm also trying to keep my mood up because getting sad and anxious doesn't help my stomach but it's difficult. Does anyone else worry about these symptoms never going away? I know from my history that I have good periods and flareups but I still worry that this is how it will always be. Thanks so much for the support - this has been a challenging time for me.
