I agree that if you hit the Rome Criteria and have no red flag symptoms, it is fairly certain that what you have is IBS, but you really need to be sure. I know it's silly to tell you not to worry, but do try not to.
Triggers can be tricky. I find this post an excellent explanation of why it's so important to eliminate all the trigger foods and irritants to begin with, even the ones you're sure aren't bothering you.
Eating a lot of insoluble fiber is great, as much as your body can tolerate. As you've discovered, it's cushioning the IF with SF that makes it go down more easily. And overeating seems to be a trigger for a lot of IBSers.
I do think you need to see a good GI guy to get a firm diagnosis, but in the meantime, I would definitely stick with the EFI Diet. Since you almost certainly have IBS, there's no point in waiting to see your gyn, then the GI she sends you to before dealing with it. Plus it sounds like following the EFI guidelines is making you feel better. That's great in and of itself, of course, but it also means it is very likely what you have is IBS.
