Smoothies and stir-frys!
That's what I've been making lately, smoothies with banana, few berries and soy milk. Stir fry with chicken or tofu, carrots, peppers, broccoli, just put anything you can tolerate and you like in it. I also try to make a ton of pasta or rice few times a week so that I don't have to prepare some all the time. It's easier to store cooked that potatoes (I find they dry out).
