Delayed reactions on trigger foods

Hi..
As a new member of this IBS-society, I am working hard to get in to a "safe-food-rythm". The concept of avoiding trigger foods seems to be a quite promising way out of my agony with sudden D-attacks after meals.
But I do find it hard to grasp the fact that I some days apparantly can eat (and drink)almost everything without problems, but then, as soon as I wake up the next morning, can find find my self in af very bad condition. Can any one tell me if the reactions in the gastrocolic systems really can be delayed that much? How would that be possible?
