I can't figure out whether I have problems with gluten. I just know that wheat is a no-go. And yes, I have also read that rice is the only gas-free grain. I am addicted to two kinds of rice bread - Food For Life brown rice bread (made of a combo of white/brown rice)and Kinnikinnick Sunflower Flax Rice Bread. Raw they are not so great but toasted - divine!! Kinnikinnick also makes very addictive wheat-free double chocolate almond cookies. And I eat Tinkyada brown rice pasta which is fanastic if you don't overcook it. I live in Canada so I don't know how available these brands are in the US.
As for the Beano, I agree, ostensibly it should work for grains too (the little shaft of wheat on the bottle, too funny!) However I've never really found Beano worked all that well for me with vegs. Although everyone's recent posts about Beano lead me to think I simply haven't been taking enough to see the effects. When I work up the nerve to do my "experiment" I'll let you know how it goes...
