Tess, I hope I'm not being too presumtuous, but I think I know you fairly well and I care. Here's what I think. I agree completely that you need a new job. The one you're in is NOT a healthy or safe environment for you to be in. It's WAY too much stress, and it's set up in a way that you couldn't possibly feel content with it. I suspect that that is the source of the trouble. You sound way too stressed and that's why you are worrying about your apartment (remember I have a newborn and a 2year old - I can relate to a a crazy looking home). Is your bipolar getting worse? Are your meds adequate?
A dietician may be a good idea but you likely know more than they do. Why don't you do a recipe board search from some simple recipes and cook ahead? That way you'll nave lunches ready to go and you won't have to cook during the week. I used to cook on Sunday and pack up my lunches that night.
