You shouldn't really be worried about getting enough protein, most Americans actually eat too much!
I'm a vegetarian as well, and I can't tolerate soy products. I use rice milk and rice cheeses, I eat Quorn which is a meat substitute without soy in it, and smideges of natural peanut butter. Most breads/cereals/flours are fortified with some protein as well. If you can do beans (I can't though I may try to reintroduce them now that I'm a bit more stable), those are also great sources of protein. Beano works for some people to help with the gas, which you could try.
