Finding a safe easy way to be able to chill diarrhea

I have had IBS since January of this year and my dietician put me on a low fiber low residue diet, before I went on this diet, I was just starting to eat healthy and eat foods that were low or medium in fiber then all of a sudden I had problems with having (what I call) the "D" word, I dont mind the diet, but what frustrates me is getting the "D" its like almost no matter what I do, if I eat whats on the menu for my diet no prob, but if I try something that goes along with it, I end up with "D", the holidays are coming up and I have no idea what to do with what to eat, I'm scared to try anything because I dont feel like spending the holidays in the bathroom, and not be able to eat eith my family, I have gotten to the point of just not eatting, but I know I cant do that, but my question is what can I do do chill the "D" I cant eat much fiber because I get the "D" will I ever be able to eat fiber foods again, I dont eat junk foods anymore dont eat greasy fried foods, I dont even eat or drink dairy, my other question is how can I have meat (like hamburgers) and how can I get the dairy that my body needs without having the problems, because by body needs more then just sandwich meat and being a woman my body also needs calcium so that I dont get Osteoprosis, and how can I find a doctor that deals with IBS because the only dr where I live that is listening to me is my dietician, I hope someone can help me.
