I'll be totally honest, I just buy a commercially-mass-produced sliced white sandwich bread, like Friehofers (that's the kind I get most often). I'm on a limited budget, so I can't even justify the amount I'd spend on a good bakery bread. I just check the labels and find a cheap bread that doesn't contain dairy, and I've been fine.
When the weather's colder, I do make my own bread. fatfree.com is an excellent source for bread recipes - machine and traditional, a lot of them are vegan (containing no milk), but you can substitute soy milk for what's called for in a lot of the recipes.
Also, the main difference between using milk vs. water in home-baked bread isn't the flavor, but the texture of the crust. That's pretty much it. So if you want to try omitting the powdered milk from the recipe you have (I'm assuming the recipe contained water), it will probably work just fine.
