I don't know about high energy, but if you're trying to put on weight, what you want is high calorie... and I can vouch for things like Heather's quick breads (banana, zucchini, chocolate-applesauce) as being both high-calorie and addictively delicious. Those and potatoes were almost singlehandedly responsible for putting the weight back on me, when I was dangerously thin after my last bad spell of IBS.

The breads are also very easy to make. They do take some time to stir up and bake, but each recipe makes 2 loaves and they freeze well, so it's a good time investment.
