I know what you mean about cooking for one....it seems like so much work. My husband used to work out of town alot, but lately he has just been working late. I suggest just making a normal sized meal and then freeze it into a few meals for yourself. Or I just make soup or sandwiches - just because it is alot of work for just one person.
