I'm sorry you've had to go through so much with doctors and such. I don't know too much about celiac, but it seems really irresponsible to me to not give you the test simply because you have gas! I thought gas was something people with celiac got (could be wrong), but even if it's not, you could have IBS AND celiac! Especially since you've determined that you have a chance (genes) of having it, it really seems to me like you should get that test...
When you went on the celiac diet, did you see any improvement? (Did you follow it strictly?) Remember though that if you are getting tested again that you NEED to eat gluten for a while before; from my understanding, if you cut it out of your diet your test could come back as a false negative.
If your pain does feel hernia-like (never had any experience with that so I don't know what that would be like!) have you mentioned that to your doctor?
You have had lots of tests, but you still don't seem to have a conclusive diagnosis, and obviously you don't seem very confident about it Really, there's lots more that could be done to rule out anything else. That doesn't mean that you DON'T have IBS though - IBS CAN be as painful as what you're describing, unfortunately. But you really should get thoroughly diagnosed.
