Hi Beth,



I prefer the darker spelt flour that you can find in Whole Foods (bulk section) or at a regular grocery store. I think the brand at the grocery store is Hodgson Mills or something. My experience is that Whole Foods is cheaper.



Craisins are dried cranberries...you can find them at Sams Club or in the dried fruit section of your grocery store.



Same recipe for the muffins...just cook them about 40 minutes. Always check with a toothpick for doneness at about 30 minutes until you see how your oven works. I think it makes about 18 muffins. I honestly don't remember.



I use flax seeds...they look like roach droppings which is really sick but they work. I have been relatively stable lately so haven't needed the spelt bread. It's a little dry, I always top mine with preserves or molasses.
