I refuse to use my oven in the summer. I got good at this when we had a mobil home. So do you have a grill? You can make whole meals on it. I grill veggies and meat and bread/rolls so I don't even have to put them in the oven at all. I sometimes make wraps too or other completely uncooked things like that.

turkey wraps:
deli turkey
flour tortillas
walnuts
craisins
pear slices (can use canned)
baby greens
dressing:
2 parts red wine vinegar
2 parts water
1/2-1 part olive oil
pour the dressing on the rest of ingredients and roll up real fast (roll the way they do when you order a wrap somewhere-sides in then tightly roll the rest away from you.)
Originally these also had blue cheese on them. I eat them with my acacia if I don't want to make any other SF sidedish.
If you have Heather's cookbook try the Viet chicken over rice noodles. The rice noodles can be set in boiling water and soaked and then drained and cooled.
