And you can make so many variations on it that I literally never get tired of it.
One of my favorites right now is RachelT's Almond Chicken Salad - I make it without the chicken most of the time, and it's still so good. You could toss some chickpeas in there for protein, too, if you wanted.
Another quick option, with fewer ingredients, is Kree's fabulous idea... basically, half safe Italian dressing and half ff mayo, mix it up really well, and use it as the dressing for pasta and whatever veggies you can tolerate. Quick and really tasty without a whole lot of fuss!
Other good options would be potato and rice salads... I've been getting into the rice salads, especially, lately as a change of pace from the pasta. And another thought on the rice, it's super-easy to cook rice in the microwave, so no need to fire up the stove!
