You're right! I truly should bake some stuff to get enough calories in, daily. In response to your suggestion, I did a little shopping, today, as I am ill-equiped to bake safe hypo-allergenic treats for ME. Yes, I'm worth it and also, it is fun. Not getting enough calories is ultimately depressing and variety is nice. I still need a few more things, but I'm arriving at it. Then, I just need a recipe or adaptable with which to experiment.
Today, I bought rice flour, corn meal, arrowroot flour, and egg replacer--it's made by Kingsmills. I can't risk another egg allergic reaction! I need a few baking pans and other odd items, but I just wanted to express thanks for your encouragement and suggestion. After much contemplation, I decided that a.) I'm worth it and b.) it's fun!!!
I also bought some all fruit bars (frozen treats), some more fresh fruit, and organic bananas to retest. I think I o'd on them and started getting headaches.
Do you have a breadmaker? What are a few of your favourite recipes/preferences? What's your favourite cereal? I'm having problems with puffed brown rice--too much IF for D and pain-predominant me. Are there any products you favour, i.e. treats/snacks? Sorry if I sound like I'm "grilling" you.
