Hi Wendy. I hope all is improved. I thought I'd share a few of my favourite salad dressing tips. Prior to IBS, I used to be addicted to the type of dressing that you mentioned. I find, though, that I'm hypersensitive to the olive oil. I find, also, that most fatfree salad dressings are vile, especially the Italian. Lowcal Italian almost always makes me feel retched and nauseated. Therefore I whip up my own.
Iceburg lettuce gives me major gas and bloating and therefore I do not eat it. There is no raw cabbage involved , either. Just lettuce--romaine hearts, spring mix, alfalfa sprouts, boston lettuce, leaf lettuce--those sit well with me. Raw spinach does not digest well with me.
I love heating balsalmic vinegar and reducing it and then pouring it on my lettuce, with stevia and sometimes a little dijon and lemon. Carrot juice and cider vinegar is pretty good too, but lately I'm cutting down on my frutcose intake. I love roasting or grilling mushrooms, the darker and earthier the better and using the reserve liquid as the vinegrette, with a little lemon and balsalmic vinegar. Or even lime juice. If I feel like a thicker dressing, I use a puree of vegetable or a soup and pour that on the salad with a little tartness or acidity, usually from vinegar and/or lemons. If it need a little sweetening I go for stevia. Sea salt makes a world of difference. I used to like fruity dressings, which I pureed,heated and reduced, i.e. with berries and balsamic vinegar or apricots, mangoes, cranberries, etc. Those ones really go through me to fast, lately, so I've been avoiding them. This next one sounds gross, but it's rather good. A whipped potatoe and herb dressing is delicious and really creamy and thick. Sweet potatoes are really good, too. Oh, how could I forget...the creamy zucchini dressing. Just cook and puree zucchini and add any palatable herbs and liquid until you get the consistency you enjoy. Roasted and peeled peppers/tomatoes if you tolerate them--I do not--are delicious dressings. I know you detest spinach, but I really like my creamy spinach dressing which is basically steamed and pureed spinach with herbs/lemon/balsalmic vinegar, etc., a little stevia.
Those are just a few flash thoughts and salads that sit well with me.
