Pesach is the same thing as Passover, it's just the Hebrew word instead of the English version. Passover commemorates the Exodus from Egypt (which is all laid out in Exodus). During the length of the holiday (8 days) one cannot eat leavened products, also called "chametz" (which is what I think you meant by the yiddish). This includes bread, crackers, and pretty much anything with grain in it or that was made on things that had grains cooked on it.
Kosher, in fact, means that the food adheres a specific set of guidelines and restrictions laid out by the rabbis and has been subsequently approved.
