I am no expert since I am a VERY lapsed member of the faith, but, as far as I know, Judaism makes allowance for people with health problems that require them to follow certain diets. For example, you don't have to fast at Yom Kippur if you suffer from some sort of health problem that requires you to have food (for example, diabetes). In my case, I can't fast both because I suffer from blood sugar problems and IBS.
Judaism makes other exceptions too. For example, I believe a pregnant woman can have an abortion if, by carrying the baby to full term, the mother's life would be at risk.
I would be very surprised if the same philosophy didn't apply to Passover. I would think it would be okay for IBS people to eat their regular soluble fibre food (bread, etc.) if, by not eating it, they might get sick. I would also think they would not be required to eat or consume anything that might make them sick such as, for example, drinking wine at the seders or consuming the hot radish mixture (symbolic of hard times in the desert??) on matzoh.
Are there any experts out there who know for sure about this?
