You do not sound dumb! All are valid questions! You cannot tolerate red meat, dairy, coffee, because they are major IBS triggers. Here is a list of how to eat for IBS: web page
Most importantly, you need to get to a doctor that will order a colonoscopy done. It is the only way to tell whehter you have IBS or not. IBS can mimic a lot of other ailments. It is critical that you get a proper diagnosis. Push for it from your Doc. Get a referral to a GI specialist.
