Honestly, when my health and comfort is at stake, I really don't care if any thinks I'm being impolite, and I also don't care if I'm being "annoying". Some things are more important than what other people think of me. Do you think they'd give a diabetic a hard time for not eating something with sugar in it? Not likely. So therefore they can also bite their tongues when I say I'm not eating what they're cooking.

Alicia had some great suggestions for restaurant eating - I think she's covered just about everything. Don't be afraid to ask questions of your server - if he/she doesn't know the answer, they'll go ask someone. Most of them are too concerned with getting good tips to give you a hard time about questions! And I've found that pretty much any restaurant will be accomodating if you explain that you have health problems - I use the "food allergies" excuse, because it makes it sound like you'll be hospitalized if they don't accomodate you! - and prepare things without butter, and with sauces on the side.
Unfortunately, there ARE dairy products in most commercially prepared breads - in restaurants and not, so if you haven't been reading labels on the bread you buy, you might want to do that too! I never assume something is safe in a restaurant.
*But*... almost every restaurant I've ever been in has some variation of a grilled chicken breast or grilled fish, and those are safe. They will almost always also be able to provide you with a plain baked potato, which is safer than bread for your soluble fiber option.
