Cool Whip should be just fine. If the ingredient is at the bottom of the list, it's a very small amount. I use the non dairy creamers all the time. They should be fine, too.
As for staying stable while eating with others, it is a bit tricky. At restaurants, ask for all dressings and stuff on the side, and politely ask that your meal be prepared with the least amount of oil/butter possible. Go for grilled or baked things as opposed to fried. As for eating at other peoples homes, that can get hard. You just have to do the best you can. Be polite, and try to fill up on the foods you CAN eat (if there is anything you can eat) and tell them that you just don't have room for any more food because you filled up on .... whatever. I often eat a bowl of rice or a small bun before going to peoples houses - that way I know I've got a good cushion of soluble fibre, and if there isn't anything I can eat, I won't starve to death. You can tell your hostess you had a light snack before you came and aren't all that hungry. Hope this helps.
