A Couple Questions

I have always known this was the best plan for IBS. I just never had the discipline to try it until this past week. I'm just curious about a couple things: 1. I have read two books by Drs. recently. I am wondering-why do these guys always advocate High insoluble fiber diets and no "simple carbs" (i.e. french bread, white rice"). I had been ill with diarrhea for a week, so I decided to try one of the "elimination" diets in one of those books. It was basically brown rice, cooked vegetables, raw nuts for snacks, and no wheat or dairy. Of course, after a day of this, I became even more ill! So I gave up on it, and went on this plan instead. Within a couple days, I was feeling MUCH better. 2. After two days on Heather's diet, I had a bad attack of diarrhea again, and am still trying to recover from it. This is SO frustrating! I have narrowed it down to a couple things that may have triggered it, and I'm wondering if anyone can help with what it was. The things I ate that weren't strictly on the plan were: a slice of angel food cake, about 3 TBSP. of Soy Cheese, a small amount of Splenda artificial sweetener, and some margarine. I actually ate a pasta dish with very little dairy but a lot of fat-could that have done it? It's so depressing to have felt good again and then gone back downhill. I will do WHATEVER it takes-I just want to start having normal bowel movements so I can start transitioning in some things like fruits and cooked veggies. Any ideas? Thanks.
