Pasta is my fallback quick dinner. It's even quicker if you make a ton of it and keep it in the fridge to microwave-reheat.
I do pasta and tomato sauce most often, but my mother's nothing-for-dinner fallback is a pasta and vegetable saute. She cooks up a bunch of vegetables (broccoli and carrot, usually, but use what's safe for you) with some garlic and onion, sometimes adds a drained can of tomatoes or some diced chicken (I know, you wanted to omit that, that's fine), and then mixes in cooked shell pasta. Serve the whole thing with soy parmesan. It does take a little while to make, but again, if you make a big bowl of it on a day you have time, it reheats well and lasts a while in the fridge, without the chicken.
