I'm glad you found this site. It was a life saver for me too.
Breakfast is my favorite meal of the day so I figured I'd just jump right in and answer your first question.

Oat meal is great but it can get boring. Rice cakes with mashed bananas make a nice change as well as dry cereal with soy milk. (Check Heather's snack list for safe cereals.) Also never underestimate the power of a muffun! There are so many safe recipes out there on the recipe exchange. Here's my favortie muffin recipe:

Muffins – Basic Mix

1 ¾ c. flour
2 tsp. baking powder
2 tbsp. oil
2 tbsp. apple sauce
¾ tsp. salt
4 egg whites or 1/2 cup egg beater
1/3 c. sugar
¾ c. soy milk
Flavorings (carob chipps, nuts, dried fruit - whatever you can tolerate)

1. Preheat oven to 400*
2. Combine Dry ingredients
3. Beat eggs in a separate bowl
4. Gradually add oil, apple sauce and soy milk
5. combine both bowls and add flavorings
6. Pour into 12 greased muffin tins
7. Bake at 375* for 25 minutes
8. Adapted from a recipe in the Spice & Spirit Cookbook

And here is my favorite pancake recipe:

Pan Cakes

1 c. flour
1 egg white or 1/4 cup of egg beater
1 tbsp. sugar
1 c. soy milk
1 tbsp. baking powder

1. Pour egg into a glass pitcher
2. add milk and beat
3. add the rest of the ingredients and mix well
4. pour cakes onto greased skillet over a medium flame
5. fry till cakes bubble
6. flip and fry other side until it rises slightly
