No dairy!

Even though you may think you can tolerate dairy, it may be contributing to your overall IBS symptoms. Dairy is one of the worst things you can consume when you have IBS. I doubt if there are any exceptions to this.
As for wheat, well, it's fine for IBS as long as you consume products made from white flour (French bread, etc.). White flour is a "soluble fibre" and is easy to digest. However, whole wheat flour, which is an "insoluble fibre" thus difficult to digest, is not recommended for IBS.
As for "easy meals," I put aside every Sunday afternoon to prepare my meals for most of the week. With all of my food prepared ahead of time, I just come home after work and warm it up.
Right now, if you're not feeling well, I would recommend cooking some organic white rice (basmati white rice works well for me), a plain organic chicken breast and some organic carrots and drink lots of organic peppermint tea or, if you don't have any, just have boiled water.
I really do suggest, though, that you give Heather's diet a serious try. When I first came upon her diet, I was convinced I could tolerate red meat (which Heather says is an IBS no-no). Eventually, though, I tried taking red meat out of my diet and was I ever surprised how much better I felt. The trouble with red meat -- and dairy -- is that it is too fatty for us IBSers.
