I did a search to see if anyone had posted about Oatcakes, but didn't see anything. I found a box of Nairn's Organic Oatcakes at the grocery store yesterday (made in Edinburgh, Scotland). They are made of 84% organic oats, non-hydrogenated oil, & baking soda. They're kind of like a large, crunchy, oatmeal cracker - good, but need something on them (jam, soy cream cheese, etc.) Nice change from bread. Also, I was a little worried about the lack of vegetables I've been eating so I made Heather's Zucchini bread last night (finally cool enough to turn on the oven ) - it is WONDERFUL - hard to believe it's totally safe! I can't wait to make more of the breads - thanks Heather! Leah
