I found the G (gas) situation goes up and down (hope this isn't a bad pun!) Sometimes I can get away with eating veggies with little or no G and other times like M (menstruation) nothing helps.
Anyway, for what it's worth, try the following:
1. This is the MOST IMPORTANT. Eat ONLY organic veggies. The pesticides and additives (preservatives, etc.) used on conventional veggies are likely to aggravate your IBS. As well, you have no idea what you're eating if you eat conventional veggies because I think they are all genetically modified now.
2. Cooking, peeling, pureeing, de-seeding veggies makes them more tolerable. Steam, bake, boil 'em. Don't fry.
3. Keep quantities of veggies to a minimum and perhaps restrict them to just one meal.
4. ALWAYS eat your veggies with LOTS of soluble fibre.
5. The gassier veggies are things like cabbage, brocolli, cauliflower, zucchini, cucumbers. Less gassy veggies are things like carrots, beets, turnips, routabegas (can't spell!) and other root veggies.
6. Refrain from adding any fat (such as margarine) to your veggies.
