How stressful this must all be for you! You are really taking a great step toward feeling better by coming here and asking questions of people who have all experienced this!
It's possible you are trying to eat too many foods all at once (so rice may not be a trigger, but rather something you ate before). Have you tried keeping a food diary? If you start out on the "what to eat when you can't eat anything" diet, and keep a diary, it should really help you determine what things are or are not triggers. As some people have mentioned, it is possible to get an attack even a couple of days after you've eaten a trigger food.
There have been a few on this board who have said they were tested for Celiacs and gluten intolerance and got mixed up results. I don't know if that could be the case for you, but if you choose not to eat gluten, there are some members who manage the IBS diet just fine. There have been some recent posts on this, I believe, if you do a search.
I just wanted to mention (hence the quote from your post) that there ARE other things that can mimic IBS symptoms. So if you haven't already gone in for the full work-up of tests to rule out those other things, you really need to do so. Don't let your docs give you an "I think you have IBS" answer - push for the tests, because "I think" isn't a good enough answer for your health.
