You know -- first of all -- only the smart balance LIGHT is dairy free -- so be careful about that. The regular smart balance has dairy in it. I know they say that you shouldn't bake with smart balance light because the fat content is too low -- and the texture won't be right. I still do -- I used it in bread -- cinnamon roll bread.... so it wasn't cookies or anything like that. I have never tried it in candy or anything where it was a major part -- or very important to the recipe.

You could try... But I have no idea how it would turn out.
